Chocolate Mille Crepe Cake
Mille crepe cake is one of my favourite and ever since I tried it at Maco Bakery in Skudai, Johor, Malaysia, I always find myself went back for more. Ever since I moved to Dubai, I have yet found a nice mille crepe cake. It consists of 10-20 layers of thin layers crepe layered with whipped cream in between and tasted so heavenly. Although there are many times I search for its recipe but I have yet try to make them as I find it tedious to make the layers one by one. 

One fine day, I decided to go ahead and make them and I am enjoying a piece while typing out this blog. To be exact, it is my second piece today :P Time to go for exercise after this!

As it is my first attempt, I find the whipped cream layer is a little too thin for my taste bud. I am definitely going to increase the amount of whipped cream and spread a more generous layer for my next attempt but for now, I am going to enjoy this chocolate mille crepe cake.

INGREDIENTS (Makes one 8 inches crepe cake):

For the thin crepe layers:
1. 400ml of full fat fresh milk
2. 1 1/2 tablespoon of sugar
3. 3 large eggs
4. 25g of butter, melted
5. 1 cup of cake flour
6. 2 tablespoon of cocoa powder
7. 1/2 teaspoon of baking powder

For the fillings:
1. 240ml whipped cream or more according to taste. 
2. 1-2 tablespoon of sugar (if you like it to be sweeter)

METHODS:

1. Place the milk and sugar in a saucepan and heat it up on low heat. Slowly stirred until all the sugar is dissolved.
2. In a mixing bowl, beat the eggs and slowly add in the warm milk mixture. Whisk till combine.

3. Add in the melted butter, whisk to combine.
4. Next , sieve the cake flour, cocoa powder and baking powder into the mixture by batches and whisk to combine.

5. The mixture should looks runny as shown.
6. Once ready, cover the mixing bowl with a cling film and place them in the fridge for an hour to let it settle down.
The batter should be very thin and flowy
7. Heat up cooking pan on low heat. Using a kitchen towel, spread a thin layer of cooking oil and pour the batter in. 
8. Cook for 1-2 minutes until the sides looks crispy. Using a spatula, flip the crepe. 
9. Once the crepe is cooked, remove and set aside to cool down.
10. Repeat until all crepes are cooked.
Make 18 layers altogether
11. Beat the whipped cream until stiff. Then assemble the crepe cake by putting a layer of whipped cream in between the crepe.

12. Once it is done, sprinkle some cocoa powder on top and pop them into fridge overnight.

Cook: Soft Flowy Ramen Egg


Ramen egg is one of our favourite and only now I realise it is not hard to make. You can make in advance and keep in fridge up to 3-4 days. So, can just pop one into your ramen/udon noodle anytime of the day :)

The softness of the yolk depends on the time that you cook the egg. If you like the yolk to be really soft as shown in the photo, it takes 7 minutes. If you like it slightly less flowy, do cook it for 8-9 minutes. 

INGREDIENTS (Makes 4 eggs):

1. 4 large eggs
2. 4 tablespoon of soy sauce
3. 4 tablespoon of miring
4. 4-6 tablespoon of water (adjust saltiness according to taste)

METHODS:

1. Combine the soy sauce, miring and water in a plastic bag and set aside.


2. In a saucepan, add enough water so that it will cover the egg later, bring water to boil.
3. Once the water is boiling rapidly, add in the eggs straight from the fridge using a ladle to prevent the eggs from breaking.
4. At the same time, reduce the heat so that the water is just simmering with small bubbles as shown in the picture.
5. Simmer the egg for 7-9 minutes depending on your preference of the egg's texture.

6. Once the time is up, remove the eggs and place them into a cold water bath that you have prepare in advance. Leave them in the cold water for 3 minutes.

7. Then slowly peel the skin. Be careful as the egg is very soft. 
8. Place the peeled egg into the plastic bag with the soy sauce mixture. Place them in the fridge.

9. Keep them overnight or at least for 3-4 hours so that the egg absorb the soy sauce. Consume within 3-4 days.

Cook: No Bake Oreo Cheesecake




INGREDIENTS (Makes a 9 inches cheesecake)

1. 18 Original Flavour Oreo Biscuit and 10 digestive biscuit (Crush into crumbs by placing them in a food processor or place them in a plastic bag and crush them using a rolling pin ). Use 2/3 for the cheesecake base and set aside 1/3 to mix into the cheesecake.
2. 90g of butter, melted
3. 400g of cream cheese, soften to room temperature
4. 320g of whipping cream
5. 10 Oreo Biscuit (Remove cream in middle, and break into medium pieces)

METHODS:

Preparing cheesecake base
1. Place 2/3 of the Oreo/digestive crumb into the springform pan and add in the melted butter.
2. Mix well, and press down the biscuit mixture using the back of a spoon.
3. Chill in fridge for at least 1 hour.

Preparing the cheesecake mixture
4. Whip the whipping cream using mixer until medium peak. Set aside.
TIPS: Use high speed for 3-5 minutes or until the cream thickens, then reduce to low speed until it reached medium peak. This is how it will looks like: Medium Peak Whipped Cream.
6. In a stand mixer, blend the cream cheese until it is creamy. It should just take 1-2 minutes.
7. Add the whipped cream into the cream cheese mixture by batches and stir in using a spatula. Do not over mix.
8. Add in 1/3 of Oreo/digestive crumbs that we set aside earlier. Fold in until just combine.
9. Pour the mixture into the springform pan and smooth the top using a spatula.
10. Place the Oreo pieces on top of the cheesecake mixture.
Ready to chill overnight
11. Chill in fridge overnight or for at least 4 hours.
12. Serve chill.

Cook: Apam Balik aka “Min Jiang Kueh”


Apam Balik
Apam Balik is one of my favourite snack from night market in Malaysia and my favourite part is the sweet corn inside, creamy sweet and yummy.

INGREDIENTS (Makes 6):

1. 220 ml of fresh milk
2. 60ml of oil
3. 2 eggs
4. 160g plain flour
5. 3 teaspoon baking powder
6. 1/4 teaspoon salt 

For fillings (amount as wished)
1. Butter 
2. Grind peanut mixed with some white sugar
3. Cream style sweet corn


METHOD: 

1. In a mixing bowl, add milk, egg and oil. Mix well


2. Next, add in flour, baking powder and salt. Mix in well.

3. The mixture should looks runny like this.

4. Heat up a flat pan with medium heat. Use a kitchen towel and spread a thin layer of oil on the pan. 
5. Add a scoop of mixture into the pan and spread well. Cover the pan for 30-60 seconds until small air bubbles appear.

6. At this time, remove the cover and add butter, peanut, and cream corn. 
7. Cover for another 20-30 seconds until the skin turned brown. Flip over and serve warm.

Cook: Stir Fry Turnip Cake (萝卜糕)


After my successful turnip cake the other day, I decided to make it again. This time round, I omitted the dry shrimps, Chinese sausage, and mushroom and make plain turnip cake as I planned to stir fry them. 


INGREDIENTS (Serves 4-5 person):

1. Steamed turnip cake using the recipe attached (left overnight in fridge to firm up)
2. Minced garlic
3. Cai Poh 
4. Fish sauce
5. A pinch of pepper 
6. 6 eggs
7. Spring onions

METHODS:

1. Cut the steamed turnip cake into small chunks.
2. Heat up oil in frying pan and stir fry the turnip cake chunks till it's lightly browned. Set aside.
3. In the same frying pan, add some oil and stir fry minced garlic and chai poh till fragrant.
4. Add in the turnip cake and mix well.
5. Drizzle fish sauce and pepper. Stir fry to mix well.
6. Beat the eggs and pour them over the turnip cake. Let the egg set a bit and then flip them over.
7. Add spring onions and stir fry for a while.
8. Serve hot! Enjoy!


Cook: Easy Thai Sticky Rice



I have never known it is so easy to make Thai sticky rice. Mango is in season now and mango is sold everywhere in supermarket. Time to make some sticky rice...

INGREDIENTS (serves 6)

1. 250g sticky rice
2. 200ml coconut milk
3. 30g sugar
4. 1/4 teaspoon salt

METHODS:
1. Rinse the sticky rice until the water is not cloudy. Then soak for 6 hours.
2. Drain the water and place the sticky rice into a steamer. Do cover the sticky rice so the water from the steam doesn't goes into the rice.
3. Steam for 15 minutes.
4. While the rice is in the steamer, heat up the coconut milk, sugar and salt in a saucepan.
5. Once the rice is cooked, remove from steamer and mix in the coconut milk mixture. \
6. Serve warm , topped with mango.
7. Enjoy! Best eat warm :)


Cook: Ang Ku Kueh (Peanut fillings)



Made a batch of Ang Ku Kueh today with peanut fillings.

It's relatively easy to make. First prepare the fillings , just remove the skin and blend the roasted peanuts. Then add some sugar and mix well.

INGREDIENTS (Makes 10 Ang Ku Kueh):

1. 150g glutinous rice flour
2. 1 tablespoon of sugar
3. 1/8 teaspoon of salt
4. 2 drops of red food colouring
5. 125ml of hot water
6. 20ml cooking oil

METHODS:

1. First, mix the glutinous rice flour with salt and sugar. 
2. Make a hole in the centre, add the hot water , followed by oil and food colouring.
3. Use a fork to mix well. When the dough cool enough to handle, use hand to knead into a pliable and shiny dough as shown.
4. Cover and let the dough rest for 10 minutes.


5. Divide the dough into 10 equal pieces. Then flatten each piece into a circle. Add the peanut fillings and close them up. Then flatten it.
6. Use a fork to design the sides as I did not have the Ang Ku Kueh mould.

7. Boil water in pot until it is boiling vigorously. Then place the ang ku kueh inside and steam for 8 minutes. Do open the lid every 2 minutes to let steam escape, this can ensure that the imprint on the kueh is maintained. 
8. Once the ang ku kueh is done, brush the surface with some cooking oil.
9. Serve warm or keep in fridge and pan fried them the following day :)

Cook: Turnip Cake (萝卜糕)



Homemade Turnip Cake

Crispy outside and soft inside

Since moving to Dubai, not every street food is readily available. When I am in Singapore, if I wanted a nice plate of turnip cake, I can just walk across the road and reach a hawker centre where I can indulge in them at a very reasonable price. However in Dubai, not everywhere serve nice turnip cake, and the price is definitely much more expensive when compared to Singapore.

So I decided to take some my own to see how easy/hard it is. I am pretty happy with the results as it turned out good for my first attempt. Although I took quite a long time shredding the turnip, but it is all worth it.
The ingredients required
INGREDIENTS (Makes 8 servings)

1. 2 radish/turnip --around 1kg 
2. 2-3 cups of water
3. 2 tablespoon of dried shrimp, soaked and chopped
4. 6 pieces of dried mushroom, soaked and chopped
5. 2 pieces of Chinese sausage, chopped into small pieces
6. 2 stalks of spring onion, chopped into small pieces
7. 230g of rice flour
8. 2 tablespoon of cornstarch 
9. 1 teaspoon of salt
10. 1 teaspoon of sugar
11. White pepper to taste

METHODS:

1. Grate the turnip and add two cup of water to the turnip.
2. Place them in a wok and simmer until the turnip is cooked, stir it every now and then so that the turnip doesn't turn brown.


3. Once it is cooked, scoop the turnip and squeeze the juice out. Place the turnip in a bowl and the juice in a measuring cup. Top up the cup with water so that you have two cups of water/juice.



4. Pour the water back to the turnip and let them cool down.
5. Meanwhile, add some oil to the wok and stir fry the Chinese sausage, dried shrimp, mushroom until they are cooked, then add in the spring onion and a little bit of soy sauce. Set aside. 



6. Now that the turnip is cooled down, add rice flour, cornstarch, salt, sugar and white pepper. Mix well. The mixture should look a bit like watery coleslaw.
7. Place the mixture into a steaming bowl. Do remember to oil the bowl so that the carrot cake doesn't stick to the side and easier to remove it after steaming.

8. Steam for 50 minutes and leave it to cool down to room temperature.


9. At this point, you can cut them up and pan fried.



10. If you would like the texture to be harder and easier to cut, it is best to leave them in the fridge for a couple of hours or overnight.
