Cook: Apam Balik aka “Min Jiang Kueh”


Apam Balik
Apam Balik is one of my favourite snack from night market in Malaysia and my favourite part is the sweet corn inside, creamy sweet and yummy.

INGREDIENTS (Makes 6):

1. 220 ml of fresh milk
2. 60ml of oil
3. 2 eggs
4. 160g plain flour
5. 3 teaspoon baking powder
6. 1/4 teaspoon salt 

For fillings (amount as wished)
1. Butter 
2. Grind peanut mixed with some white sugar
3. Cream style sweet corn


METHOD: 

1. In a mixing bowl, add milk, egg and oil. Mix well


2. Next, add in flour, baking powder and salt. Mix in well.

3. The mixture should looks runny like this.

4. Heat up a flat pan with medium heat. Use a kitchen towel and spread a thin layer of oil on the pan. 
5. Add a scoop of mixture into the pan and spread well. Cover the pan for 30-60 seconds until small air bubbles appear.

6. At this time, remove the cover and add butter, peanut, and cream corn. 
7. Cover for another 20-30 seconds until the skin turned brown. Flip over and serve warm.
